3. Injera (Spongy Flatbread) - Side Dish

Ingredients:

2 cups teff flour
1/2 cup all-purpose flour
3 cups water
1/2 teaspoon baking soda
Salt to taste
Instructions:

In a bowl, mix teff flour and all-purpose flour.
Add water gradually, stirring to avoid lumps.
Let the batter ferment for 24-48 hours.
Add baking soda and salt to the batter, mixing well.
Heat a non-stick skillet and pour a ladle of batter to make a thin pancake.
Cook until bubbles form, then cover until the edges lift.
Repeat until the batter is used up.
